Is there anything to grab in Sovngarde?
Before engaging in battle in the next quest, there are two unique items found in the Hall of Valor, a Roasted Ox Head, and two Roasted Ox Legs. The Dragonborn cannot re-enter the Hall of Valor once the next battle has started, making this quest the only time they can be picked up.
Is there anything hidden at Skuldafn?
Skuldafn South Tower is a small dungeon directly connected to Skuldafn Temple area. It is found in the southwestern end of Skuldafn. Inside can be found a handful of Draugr of various level. There is nothing of importance besides a chest and two urns.
Is there any good loot in Skuldafn?
Everything else in Skuldafn is generic leveled stuff, and there’s no notable loot in Sovngarde itself other than (as pointed out in the comments) some unique clutter like the ox head on the dining table. Sovngarde has unique clutter, I think. Like an ox’s head on the dining tables. You can’t eat it.

So how can the LDB be an avatar of Shor/Shezzar if he’s an aspect of Aka? Nothing ever implied that LDB was Shezarrine. On the other hand, it is possible to be affiliated both with Aka and Shor – just look at Pelinal. After all, they’re just two opposite ends of aurbilical cord.
