What is stone bass fillet?
Stone bass is a farmed fish that grows much bigger than farmed sea bass. This means that each fish yields a lot more than a sea bass does; two thick fillet steaks from the front and a thinner portion from the back. These are the fillet steaks. It’s the more luxurious of the three cuts we supply.
Is stone bass nice?
It’s a low fat fish, pleasant without being really distinctive. It has nice white muscle flakes and of course comes in gratifyingly large steaks, boneless when you buy them from us. We’ve seen it compared favourably with black cod, but that would be overdoing it.
